La cuisine faite maison, un engagement quotidien

À La Vieille Enseigne, on ne parle pas de “fait maison” à la légère. Ici, chaque plat est vraiment cuisiné sur place, à partir de produits bruts. Le matin, tout commence tôt derrière les boiseries de la Winstub. Au fil des heures, les gestes se répètent, les arômes se révèlent… On vous emmène dans les coulisses d’une journée avec la cheffe Rachel.

Ici, on respecte les gestes de la cuisine traditionnelle : chaque plat est monté à la minute, avec le même soin qu’au premier jour.

8h00 : La livraison des produits frais

Tout commence avec l’arrivée des produits : légumes de saison, viandes sélectionnées avec soin, produits laitiers en provenance des meilleures fermes (parfois au-delà de l’Alsace — quand le meilleur est ailleurs, Rachel n’hésite pas à aller le chercher). Ici, pas de produit tout-prêt. Pas de compromis sur la qualité. Chaque ingrédient est choisi pour ce qu’il va apporter au plat.

9h00 : Préparations et fonds maison

Pendant que l’équipe de cuisine s’affaire, la cheffe lance les préparations de base :

  • Bouillon de volaille maison pour la bouchée à la reine

  • Sauces et fonds réduits lentement

  • Moutarde montée pour le presskopf

  • Pâte maison pour les quenelles de foie

 

Ce sont ces détails qui font la différence — et qui prennent du temps.

10h30 : Préparer la carte du jour et les suggestions

Si la carte de La Vieille Enseigne est fidèle aux grands classiques alsaciens, elle évolue aussi au gré des saisons et des envies de la cheffe. Chaque matin, Rachel élabore ses suggestions du moment, en fonction : des arrivages, des produits les plus beaux, de son inspiration. C’est ainsi qu’apparaissent en saison : presskopf revisité, tarte à l’oignon du jour, ou encore bouchée à la reine aux truffes…

11h30 : En cuisine, tout est prêt pour le service

Le service du midi commence. La cheffe passe de poste en poste, vérifie chaque préparation, ajuste un assaisonnement, goûte. L’ambiance est studieuse, concentrée. Ici, on respecte les gestes de la cuisine traditionnelle : chaque plat est monté à la minute, avec le même soin qu’au premier jour.

Après le service : le moment de transmission

Quand le service se termine, l’équipe se retrouve pour échanger, partager les retours des clients, préparer le soir. Pour Rachel, c’est aussi l’occasion de transmettre son savoir-faire : techniques, secrets de cuisson, astuces d’assaisonnement… un héritage vivant de la cuisine alsacienne maison.
